The history of the vineyard of the Appellation begins in the year 600 before our era, at the time of the Roman settlers who, at the request of Greek merchants, secured the country. They laid out roads, planted vines, and created huge agricultural estates that were the first to introduce vines and wine production in the region.
It was in the 15th century that the region was named the "Côte du Rhône" because of its proximity to the river. At the same time, the first planting restrictions appeared in order to privilege quality over quantity.
It was in 1967 that the AOC Côtes du Rhône Villages was created, which today includes 95 communes in the Ardèche, Drôme, Gard and Vaucluse.
Whether red or white, the wines of the Côtes du Rhône Villages appellation are wines with a strong and generous character.
The red wines of the AOC Côtes du Rhône Village represent 98% of the production, while the white wines represent only 2%. The red wines are said to be "full and generous, with a good color intensity", while the white wines are round in the mouth.
Like any other Appellation, the AOC Côtes du Rhône Villages regulates the production of wines. For example, for white wines, the main grape varieties, therefore mandatory, are Marsanne, Roussane, Viognier, Grenache blanc or Clairette. These grape varieties must represent a total of 80% minimum of the vineyard. For red wines, the main grape varieties will be Grenache, Syrah and Mourvèdre, and will have to represent 80%, or more, of the total grape varieties. Grenache will be present at least at 40%.
The soil of the Domaine des Nymphes is mainly composed of clay-limestone soils, giving the wines a light and airy aspect that is particularly pleasant when tasting. The vines are on average thirty years old.
The wines offered by the Domaine have the same characteristics as the AOC wines, but with a desire to stand out from the crowd. Thus, the Côtes du Rhône Villages White will be all fruit and spice, with notes of white peach and apricot and a very delicately spicy finish. The Côtes du Rhône Village Red will be, as for it, on notes of jammy fruits with always this spicy final.
