Our terroir is mainly made up of clay-limestone soils, our Vin Doux Naturel Ambré is made from vines that are on average 40 years old, located mainly in the southwest of Rasteau, in the area known as "Les Encostes". This wine is composed of 100% Grenache noir
The grapes are harvested by hand and carefully sorted in the vineyard and in the cellar. This natural sweet amber wine is elaborated in the most traditional way with a direct pressing followed by a partial fermentation of the must at low temperature during fifteen days, then a mutation with addition of neutral alcohol between 5% and 10%, then an ageing of 30 months in barrels in oxidative phase.
Between generosity and character, you will find aromas of nuts, caramelized apples and quince paste. In the mouth, roundness and generosity on a long and fresh finish.
It will be tasted as an aperitif, as a starter with foie gras toasts, but also with desserts such as a tarte Tatin.
This Vin Doux Naturel should be served between 9° and 12°.
